摘要: 茶啤酒是在啤酒酿造过程中加入茶或茶提取物得到的兼具茶与啤酒双重风味的新型啤酒。茶啤酒的开发不仅可以丰富啤酒的种类、风味和生理功效等,还可以提升茶叶资源的附加值和利用率,有助于促进茶与啤酒产业的共同发展。然而,茶啤酒在原料处理、发酵工艺和澄清技术等方面的研究尚不成熟。本文结合了近年来茶啤酒相关研究,系统总结茶啤酒原料的前处理、发酵和澄清等技术的相关研究成果,并对未来的研究方向进行了展望,旨在为茶啤酒的深入研究和发展提供参考。
